
i make this cheese cake for my sister who is a cheesecake lover, comparing on many recipes, there are a few types of cheesecakes, new york style (condense), japanese style (souffle), italian style (creamy) and no baking style. cream cheese is the main ingredient then plus whipping cream/ yogurt/ sour cream, i am curious about the different of the taste regarding to the styles, but anyway i confirmed the recipe according to the texture of the cake. very exciting, recipe is very easy and simple but anyway the first time, i am a little worry about the result! it takes 1 hour of baking, and strong smell comes out from the oven, oh the surface is pretty dark so i put the aluminum foil on top of the baking pan to avoid the further burnout. ok it's done!! although the cake is good but for me cheesecake is not on my favorite list, never!! ingredients (for the cheese filling) cream cheese 375g sugar 90g egg yolks 2 vanilla extract a few drops lemon juice 1tsp sour cream 125g (for the crust) digestive biscuits 12pcs butter 3Tsp
- crush biscuits in blender until it becomes powdery
- mix with melted butter
- press biscuit mixture onto the bottom of the pan
- beat cream cheese and sugar until smooth
- put egg yolks one at a time until fluffy
- gently stir sour cream
- pour the cheese filling onto the prepared crust
- bake over water bath at 170C for 30mins
- remove water basin then bake for another 30mins
- remove from oven, cool down and chill for 2 hours
* use 8 inch baking pan
