Cornflake Cranberry Cookie


so busy recently and especially the throat is not feeling so good, stop making cookie for at least a month, today pick this cornflake cranberry cookie.

100g cornflake
50g dry cranberry
200g unsalted butter
100g sugar 50g red sugar 100g whole egg (about 2 eggs)250g flour 1/2tsp baking soda

1) preheat oven 180C.
2) soak dry cranberry into hot water until soft and dry them thoroughly.
3) mix butter and sugar together until creamy.
4) add eggs and combine well.
5) put flour and baking soda into butter mixture.
6) add cornflake and cranberry, avoid breaking down the cornflake.
7) wrap the dough and refrigerate for 1 hour.
8) shape into small ball (about 20g)
9) bake for 13 to 15mins
