i make the triple chocolate expresso cookie tonight, but i don't have enough ingredients on hand so make some changes but the result is impressive, just my sister said the cookie is too bitter, for matthew and me - love it so much! please check the original recipe from here. i changed some ingredients to: 250g of whole-wheat flour and 50g cookie flour 4Tsp instant rich coffee powder 1 cup caster sugar 1/2 cup chocolate chips 1/3 cup dry raisins instead of espresso beans all other ingredients stay the same, and i make 32 big cookies! i use Valrhona cocoa powder so the color of the cookie is very dark.
