have a very relaxing mood for making bread and cookies again, start at 11am until now 4pm, from preparation to kneading to fermentation to baking, washing hands for so many times in between, and finally everything is done and successful!! make another raisin bread, because last time was no good so make it again, and good, just not enough raisin. soft enough but can add more sugar. first time for the almond chocolate cookie which is my sister's favorite cookie, from the recipe this cookie named as "Ice-Box Cookies", after mixing all of the ingredients, the dough has to be chilled until firmer for cutting into a desire shape and size, due to the small oven, separate into 3 bakings, time consuming but good outcome! delicious!!! ingredients unsalted butter 130g icing sugar 60g salt 1/2 tsp egg yolk 1 cookie flour 160g almond powder 25g chocolate powder 25g almond slices 50g
- melt the butter in room temperature
- well combine the butter with icing sugar, salt and egg yolk
- sift chocolate powder, almond powder and flour
- add flour mixture into the butter mixture, mix until the texture is very smooth
- add the almond slices and well mixed
- wrap the dough with plastic wrap and keep it in the fridge for 30mins
- take out the dough then make it into a roll (diameter about 3cm)
- chill for 30mins in the freezer
- take out and cut into 1cm thickness
- bake for 20mins at 170C
