Chocolate Brownie with Apricot Jam
recently i am interested in baking, i try using pancake flour to replace all sorts of flour, baking soda and baking powder ... i make the Chocolate Brownie with Apricot Jam, it's very yummy, all people love it. i use Valrhona Cocoa Powder which provides a very strong cocoa favor and gives a nice dark brown appearance. oh but we don't really taste any of the apricot jam so next time i will try to use fresh banana as part of the ingredients instead, i believe taste would be a lot more yummy!!
ingredients:
butter 80g
sugar 50g
eggs 2
pancake flour100g
cocoa powder 30g
milk 2Tsp
apricot jam 60g
- mix butter and sugar together
- put eggs into #1 little by little
- sift together pancake powder and cocoa powder
- put #3 into #2
- add milk then jam
- bake for 18mins at 180C (i set to grill for extra 2 mins for the crispy surface)
p.s. quality of cocoa powder affects the taste of the cake very much!
